Botanically, it comes from the black locust (Robinia pseudoacacia), which blooms white in May – beekeepers therefore also call it black locust honey. Unlike the more robust wildflower honey, this acacia honey is light, almost water-clear, with a delicate, floral sweetness.\u003c\/p\u003e\n\u003ch3\u003eLight as Amber, Delicate in Sweetness\u003c\/h3\u003e\n\u003cp\u003eIn the glass, Miele di Acacia displays a pale gold, almost translucent. Bees are the only animals kept on the farm – \"free animals that function as environmental thermometers,\" as Luca describes them. Not every year do the black locust trees bloom strongly enough for a single varietal honey; in some years, it remains only Millefiori, and Miele di Acacia is simply not produced.\u003c\/p\u003e\n\u003cp\u003eAround 40 permanent employees keep the business running throughout the year, some already in their second generation alongside the family. Harvesting, centrifuging, and bottling are done by hand into 250-gram jars, \"because to cultivate the land, you have to know the past,\" is the Guerrieri motto – a motto that also applies to their natural bee pastures. Since 1996, the farm has also been registered as a teaching farm in the region. Should it crystallize, a water bath at no more than 40 degrees Celsius for 5 to 10 minutes will make it flow again.
