After a long lees aging until summer, the wines are bottled unfined before autumn. The focus here is on the complexity of these wines, framed by the fine expression of the wooden barrel. Three vineyards in the locations of Edenkoben, Diedesfeld, and Hambach are planted with this variety as an experimental cultivation. The training system is cordon, which results in a linear and thus easier-to-manage grape zone. Nevertheless, the cultivation of this variety in our latitudes is very labor-intensive due to its enormous fertility. The vineyards are permanently covered with greenery, partly by natural herbs and partly by targeted seeding.

The harvest took place as late as weather and grape health allowed. Grapes were harvested into small, 20-kilogram crates. Afterward, the grapes were crushed and pressed. The juice was immediately transferred to used French oak barriques, where the must underwent spontaneous fermentation. In spring, partial malolactic fermentation occurred, and the wine aged on its fine lees until summer, which were stirred at regular intervals (battonage).
