Edesheim, a small village on the Southern Wine Route. Here, in the backyard of a Palatinate family winery, a chef has rediscovered acidity. Jens Michael Lang, trained in Michelin-starred kitchens and married to a winemaker's daughter, started his own manufactory a good decade ago and gave Palatinate wine a second career: as vinegar.

What comes out of Lang's barrels is not uniform industrial vinegar, but rather characterful products with a clear regional origin. Riesling, Pinot Noir, and Müller-Thurgau from the family winery form the base; regional ingredients such as quinces, cherries, apricots, and chestnut honey are added. For the exotic lines—fig and date, vanilla and saffron—the ingredients also extend beyond the Palatinate, but with the same commitment to origin and quality.
