Puro is a purist aceto line from the Italian Alico Group — the sister line to Fattoria Estense from the same company. While Fattoria Estense classifies traditionally by maturity levels (Bronzo, Argento, Oro, Tradizionale DOP), Puro takes a different approach: a few, clearly defined Condimenti from the Modena consortium, each with its own straightforward profile.
Alico is a member of the Consorzio Tutela Aceto Balsamico di Modena and has been producing according to the specifications of the protected designations IGP and DOP since the late 1980s. For Puro, however, the focus is outside these aging schemes: three Condimenti — a light, a dark, and a rosé-tinted variant — which are sorted directly by character, not by class.
Three Condimenti, three characters
Condimento Bianco — light Condimento made from cooked Trebbiano must, gently aged in lighter wooden barrels. Floral, precise, light.
Condimento Aceto Balsamico — the dark variant based on Aceto Balsamico. Cooked plum, dark berries, warm woody note.
Condimento Rosé — an unusual original creation of the line. Rosé-tinted, light berries, fruity sweetness.
