Gianni Calogiuri — Aceto di Vincotto

Unlike pure Vincotto, Aceto di Vincotto is a true vinegar — reduced grape must that has also been fermented, thus developing acetic acid. Matured for a long time in wooden barrels, it combines the sweet-tart depth of Vincotto with clear acetic acid.

Taste and Character

Aroma: cooked grapes, dates, dark berries, a warm woody note. Acidity: balanced. Sweetness: deep. Consistency: dense.

What to use Aceto di Vincotto for

Like a good Aceto Balsamico — on hard cheese, grilled meat, reductions, vinaigrettes for robust salads.
