Rye Whiskey 11 Years is an eleven-year-old, unfiltered grain whisky from the Ehringhausen distillery, matured in cognac, calvados, and cherry brandy casks. Not a bourbon imitation, not a smoky Scotch, no smoothly polished standard product.

Rye Whiskey 11 Years is a Westphalian grain whisky from the Ehringhausen distillery in Werne, which matured for eleven years in oak and was composed from three different types of casks. Eleven years of cask maturation would lead one to expect a heavy, wood-dominated whisky — dark, dry, overpowered by oak. The opposite is in the glass: ripe apple, dark cherry, dried fruits, and beneath them that peppery spice that only rye brings. The long maturation did not weigh down this whisky but refined it.

Peppery Rye Spice with Dark Fruit

Rye gives a whisky a dry, freshly ground pepper-like spice that no cask can completely mask. On the nose, ripe apples and dark cherries come first, followed by raisins, prunes, and a delicate vanilla. On the palate, the picture shifts: the spice takes over, edgy and present, before the fruit recaptures it. From this interplay, the whisky draws its tension — sometimes the grain leads, sometimes the wood.

The finish is long, warm, and dry, with a lingering taste of cherry and spice. The fruit sweetness remains finely dosed; it comes from the previous fillings of the casks, not from sweetening. Those who expect a soft, creamy caress will find this rye too edgy — its spice is its program, not a side effect.

Taste Neat, Read the Turbidity as a Good Sign

The Rye Whiskey shows its best at 16 to 20 °C, poured neat into a nosing glass or a tumbler. The tulip-shaped nosing glass narrows towards the top and collects the fruit aromas above the surface; in an open tumbler, the rye spice stands out more clearly. Start without water, as an unfiltered whisky expresses its mouthfeel most clearly undiluted. Afterwards, a single drop of water opens the fruit layer and brings apple and cherry forward. Ice cubes, however, cut off the fruit and leave only the spice. Plan half an hour for a glass — this whisky changes in the air and rewards slow drinking.

If the bottle is stored cool, the content may become slightly cloudy. This is not a defect but visible proof that cold filtration was omitted; at room temperature, the whisky clears up by itself. Dark chocolate, aged mountain cheese, and dried fruits are suitable accompaniments. A detail on the side: This bottling is not suitable for cocktails — not because it couldn't taste good, but because classics like the Manhattan require a strong, neutral rye as a base. The 486 bottles of this stock are too individual for that. Those looking for rye for the bar will find better options among standard bottlings.

Cognac, Calvados, and Cherry Brandy Instead of Bourbon and Sherry

Most whiskies mature in former bourbon or sherry casks; here, all three types of casks come from the world of wine and fruit brandies. The cognac cask contributes dried fruit and warmth, the calvados cask the ripe apple, and from the cherry brandy cask comes the dark cherry that runs through the nose and palate. Each cask imparts what its predecessor left behind — flavors stored in the wood that the whisky slowly extracts over years.

Eleven years of storage is almost four times the legal minimum maturation of three years. During this period, part of the content evaporates year after year through the cask wall, the rest becomes denser and more concentrated. In the end, there were 486 bottles — a number that cannot be repeated, because an eleven-year-old cask inventory cannot be re-distilled.

Behind the bottling is a grain distillery that has been operating in Werne, Münsterland, since 1962 and has been managed by Theres and Georg in the third generation since 2012. "Korn can do more" is the claim of the house, and a rye stock that lay untouched in the cellar for eleven years is perhaps the clearest way to fulfill it. The omission of cold filtration also fits this attitude: it would make the whisky crystal clear, but in doing so, it removes fatty acids and esters that carry body and mouthfeel. Here, the choice was made for aroma and against optics — a choice that can be understood with every sip.

A Rye Whiskey for a Special Evening

German rye whisky with eleven years of maturation and triple cask aging is a rarity, even missing in well-stocked collections. This is exactly what makes the bottle a gift for connoisseurs who think they've tried everything — and a candidate for the conclusion of a long dinner, when there's time for a slow glass. If you're looking for contrast, place it next to the Corn Whiskey 6 Years from the same house: softness and vanilla there, spice and fruit here. Together, they make a small tasting of the two grains.
