Vadouvan is a fermented French-Indian spice blend made from onions, garlic, and curry spices, produced by Altes Gewürzamt in Klingenberg am Main. It's not a yellow curry powder, not a chili blend, and not just a shaker spice for convenience.

Vadouvan is a spice blend from Ingo Holland's Altes Gewürzamt, in which fermented onions and garlic merge with cumin, mustard seeds, and curry leaves. When you open the tin, something unexpected happens. Instead of the familiar curry sweetness, a dark aroma rises, reminiscent of soy sauce, roasted onions, and lovage. Some even think of meat extract, although the blend is entirely free of animal ingredients. This depth is the result of fermentation. It makes the spice one of the Klingenberg manufactory's most unusual and rarest. Only a few manufacturers in Germany go to such lengths.

The Taste of Fermentation

The blend tastes deep, warm, and savory, with distinct umami notes, a subtle sweetness from roasted onions, and a delicate bitterness from fenugreek. Fermentation unlocks the flavors of onions and garlic before both are gently dried. What would be sharp and volatile in its raw state becomes round, mellow, and long-lasting through this process. Fennel seeds and curry leaves add a warm, almost resinous spice. Turmeric provides an earthy base without making the blend yellow and mild.

On the palate, the aroma develops in waves. First the roasted onion sweetness, then the savory-salty depth, and finally a dry, spicy finish reminiscent of dark roast gravy. This is not a heat bomb. Those looking for the freshness of a Thai curry will find the blend too dark. It is also not suitable as a mild shaker spice for the breakfast table. It works in depth, not on the surface. This is precisely what makes it so effective in sauces and stews.

Even its appearance differs from ordinary curry blends. Instead of fine, uniform powder, the tin contains a coarsely structured, dark blend with visible onion pieces and seeds. Rubbed between the fingers, it feels slightly oily and immediately releases its roasted aroma. This structure is intentional; it shows that dried, fermented ingredients have been used, not a free-flowing industrial powder.

Fat is its best ally. Dissolved in butter, cream, or olive oil, the fermented aromas unfold much more broadly than in steam. A pinch in melted butter is enough, and the kitchen already smells like a stock that seems to have simmered for hours.

From Rice Pot to Oven Cauliflower

The preparation spices rice, vegetables, lentils, and sauces that need more depth than an ordinary curry powder can provide. Simply cook a level teaspoon with basmati rice. For oven cauliflower, mix a teaspoon with three tablespoons of olive oil and brush the florets before roasting. In a lentil dal, stir in the spice only in the last five minutes, along with a knob of butter. Cream sauces for poultry gain a depth with a pinch that would otherwise require hours of stock reduction. Potato dishes, stir-fries, and marinades for salmon also noticeably gain character. Glazed carrots get a savory counterpoint to their sweetness with a pinch and some honey.

A recipe idea for beginners: Knead 100 grams of soft butter with a teaspoon of the blend and some lemon zest. This flavored butter melts over grilled corn, baked potatoes, or a steak and shows in one minute what fermentation can do. It keeps well in the refrigerator for about a week, and in the freezer, shaped into a roll, for several months.

Those looking for a ready-made blend based on this concept will find it in the Vegetable Spice from the same manufactory. The Umami Spice Blend works even more concentrated, with the fermented base reinforced by tomato flakes.

From experience: Do not add the spice to hot frying fat; the fenugreek it contains becomes bitter at high heat. It is better to stir it in towards the end of the cooking time to preserve the fermented aromas. Use sparingly. The blend contains no anti-caking agents, is correspondingly concentrated, and remains aromatically stable for months in a tightly sealed tin.

From Puducherry to Klingenberg

Vadouvan likely originated in Puducherry, the former French colony on the southeast coast of India, as a further development of the Tamil spice paste Vadavam. There, onions, garlic, and spices are traditionally formed into balls and fermented and dried in the sun for days. French chefs adopted the blend and made it a bridge between Indian spice and European sauce culture. To this day, it primarily appears in upscale restaurants. In German retail, it remains a rarity; most curry blends on the shelves skip the lengthy fermentation step.

There is a reason for the effort. During fermentation, enzymes break down the pungent sulfur compounds of the onion and release sweet, savory aromas. The subsequent drying concentrates these aromas and preserves them. This step is often skipped in industry because it takes time and cannot be accelerated. The difference in taste is immediately apparent.

That a Franconian manufactory produces this rarity is due to the founder's biography. Ingo Holland cooked in his own restaurant with a Michelin star and 18 Gault-Millau points before hanging up his chef's apron in 2007 to dedicate himself entirely to his spices. He was reluctant to give specific application instructions, as he once told us in an interview; his blends are meant to inspire personal ideas. Since his death in 2022, his son Kilian has continued the manufactory in Klingenberg, with the same uncompromising approach to raw materials and processes. The blends are still produced in small batches on the Main, not in large industrial facilities. We have been working with Altes Gewürzamt as a specialist dealer since 2009 and know every tin from our own kitchen.

The Alternative to the umpteenth Curry Tin

What distinguishes Vadouvan from most spice blends is the fermentation step, which hardly any manufacturer undertakes. The result is unlike any other spice on the shelf. As a gift, the tin is suitable for people who seemingly already have everything in their kitchen. Ambitious home cooks who previously deepened their sauces with bouillon cubes will discover a more elegant solution here. At a dinner, the tin can be made a topic of conversation: first let guests smell it, then guess, and finally reveal. Hardly any guest will guess it's a purely plant-based spice. For quick everyday cooking, where a spice only needs to be sprinkled, the tin is less suitable. Its content is too characterful and too concentrated for that.
