Oliver Zeter Blanc de Noir La Taille 2025 is a dry Palatinate white wine made from three red Pinot varieties, obtained from the second, gentler pressing of hand-picked grapes. Not a rosé, not a sparkling wine, not a classic fruity Pinot Blanc.

Oliver Zeter Blanc de Noir La Taille 2025 is a Blanc de Noir from the Palatinate region. White pressed from Pinot Noir, Pinot Meunier, and Pinot Madeleine. Matured in used Burgundy barrels with prolonged yeast contact. In the glass, it presents a subtle, slightly patinated golden hue — more architecture than summer terrace. Those expecting the first sip will not get a quick aperitif gesture. Instead, a quiet line of light fruit, powdered stone, and fine phenolics from the wood aging.

Bright stone fruit core and a faint hint of wood

A restrained bouquet emanates from the glass. Crushed mirabelle plum, a shimmer of pear skin. Behind it, iris, acacia, and a hint of grated hazelnut. The red origin of the grapes is not revealed by the color. It can be felt as a subtle grip on the palate, almost like a well-chilled white Burgundy from a wooden barrel.

On the palate, the Blanc de Noir tends to length rather than breadth. Instead of a broad fruit arc, a angular, chalky line emerges. In the middle, it takes on some brioche and toasted almond kernel. The finish transitions into a bright salinity. The acidity is present but never sharp. The wood is there but never loud. More reserved than seductive, more structure than fruit.

Those expecting a clear peach fruit bomb will find La Taille too restrained. It rewards the second glass, not the first. A few breaths in the glass are needed before it opens up. It is also not the right format for tasting at a standing buffet or between conversations — its play is too quiet for that.

Companion for fish, mushrooms, and calm menus

La Taille drinks cellar-fresh, never ice-cold. From a slightly wider glass, the wood gets air. With floury potatoes with brown butter and trout, it shows where its strength lies. It is also a quiet companion to a tart with roasted mushrooms and thyme. Or to a light linguine dish with lemon and parsley. Its domain is dishes with umami and little competition on the aroma track.

With quiet cheeses — aged Comté, medium-aged Manchego, a dry goat cheese — it takes on the role of a clean corrective. It undercuts the cheese fats without being obtrusive. If you're looking for a Palatinate Pinot colleague for the red wine course, you'll find it in the in-house Pinot Noir. It gets exciting if you place a glass of Zeró Grande Cuvée next to it. The same harvest, but as a sparkling wine from free-run juice — a small translation exercise in the glass.

From experience: Open the bottle half an hour before the first glass. Or decant it briefly into a carafe. Directly from the fridge, La Taille appears more buttoned-up than it is. It is not suitable for intensely sweet sauces, spicy curries, or reduced tomato dishes. It lacks the necessary fruit intensity for that.

La Taille — what the second pressing does to the wine

In Champagne, the juice of a Pinot harvest is obtained in two acts. First, the "Cuvée" — the free, clearest run-off juice. It brings the most delicate acidity and the longest aging potential. Then the "Taille" — the second, gentle pressing. It extracts more phenolics, more spice, and more substance from the grape skins. In Champagne, the Cuvée goes into the grand house wines. The Taille is classically considered the idiosyncratic, somewhat more rustic sibling. It goes into reserves or younger Cuvées.

Oliver Zeter turns the tables. The free-run juice of his Pinot harvest flows into the Zeró Grande Cuvée, his bottle-fermented sparkling wine. The Taille — the juice that most houses only see as a secondary quality — gets its own still wine. Spontaneously fermented in used 228-liter Burgundy barrels. Then aged for about five months on the full lees. It is precisely this aging profile that gives La Taille its yeast note, its spicy undertone, and its length. It is a wine that turns a given of French wine production into a conscious style statement. In the German market, it stands almost alone in its category.

The idea behind it: not the loudest, but perhaps the most honest part of the harvest should get its own stage. This requires trust in the grapes and patience in the cellar. Oliver Zeter has built both over the past two decades in Neustadt an der Weinstraße, initially as the "Sauvignon Man of the Palatinate," and now with a broad Pinot program. La Taille is the quietest, but perhaps most characterful, piece in this program.

Its own category between Pinot Blanc and sparkling wine base wine

Those who taste La Taille will find no suitable category in their aroma memory. It is not a classic Palatinate Pinot Blanc. It is not a Burgundian Chardonnay from new wood. Nor is it a rosé. It is a still wine that arises where other houses stop pressing. It is precisely this position that makes it an unusual souvenir for a dinner party. Or an interesting blind tasting between an appetizer and main course. Or a bottle with which you can tell a small story at the table.

Serve it to people who have already had a lot in their glass and for whom a standard Pinot Blanc says too little. Serve it as an aperitif before a fish-heavy meal. Or as a quiet second bottle after a classic Riesling. It is also a good choice for a tasting quiz among friends — where labels are covered and only the glass speaks. However, if you are looking for a classic wine gift in the sense of "powerful, fruity, immediate," you should choose a different wine. La Taille is a bottle for people who want to read a wine up close, not consume it from a distance.

The best way to try it is in a small series: a sip of La Taille, a sip of a classic Pinot Blanc, a sip of a Palatinate Pinot Noir. This shows what the choice of pressing does with the same grape material. You don't just taste a wine, you taste a decision. And incidentally discover that white-pressed Pinot doesn't necessarily have to taste bland.

Serve it where a wine doesn't have to be loud to stand out — and watch how the second glass explains the first.
