Confetti Cake ist süßes Lakritz von Lakrids by Bülow in einer Hülle aus weißer Schokolade mit Erdbeere, Ananas und Zuckerstreuseln. Kein Salmiak, keine Schaumzuckerware, keine Kindersüßigkeit.
Confetti Cake ist eine Lakritzspezialität der dänischen Manufaktur Lakrids by Bülow. Ein weicher Lakritzkern wird in weiße Schokolade getaucht und mit farbigen Zuckerstreuseln besetzt. Der Name führt bewusst in die Irre. Man öffnet das Glas, erwartet Kindergeburtstag und bekommt eine Kugel, die kühl auf der Zunge liegt. Ihr Lakritz gibt sie erst nach einigen Sekunden preis. Die Streusel sitzen dabei nicht obenauf, sondern in der Schokoladenhülle. Deshalb bleibt die Oberfläche glatt, und die Farben schimmern unter dem Weiß hindurch, statt darauf zu liegen.
Drei Schichten, die nacheinander ankommen
Die Kugel schmeckt in drei Etappen: erst cremige weiße Schokolade, dann Erdbeere und Ananas, zuletzt mildes Lakritz. Die Hülle macht 60 Prozent aus, bei mindestens 26 Prozent Kakaoanteil. Sie knackt beim ersten Biss kurz und trocken, dann schmilzt sie breit und langsam.
Im Glas wirken die Kugeln fast einfarbig cremeweiß. Erst aus der Nähe lösen sich die Streusel als rosa, hellblaue, grüne und orange Striche aus der Hülle. Kein Farbdruck, kein Zuckerguss, sondern eingebettete Stäbchen, die dem Auge Tiefe geben. Wer die Dose schüttelt, verändert daran nichts — die Streusel bleiben, wo sie sind.
Die Frucht stammt aus zwei Prozent Fruchtpulver. Die Erdbeere wird gefriergetrocknet, der Ananassaft sprühgetrocknet. Beide Verfahren entziehen das Wasser, ohne die Aromen zu kochen. Genau darauf kommt es an: Feuchtigkeit würde die Schokolade brechen lassen und die Hülle stumpf machen. Darunter liegt Sahnepulver mit Vanillegeschmack. Die Kombination aus Sahne, Vanille und heller Frucht erzeugt den Kuchenton, den der Name verspricht.
Der Kern bleibt zurückhaltend. Ein Prozent Süßholzextrakt bedeutet weiches, süßes Lakritz ohne Salzspitze. Wer die kräftige Sorte E gewohnt ist oder skandinavisches Starklakritz erwartet, wird diese Sorte als zu brav empfinden. Umgekehrt ist sie der sanfteste Einstieg im Sortiment des Hauses. Auch für Menschen, die Lakritz bisher mit Hustenbonbon verbunden haben.
Zu Espresso, Vanilleeis und einem Glas Portwein
Stellen Sie das Glas 20 Minuten vor dem Servieren kalt. Dann bleibt der Schmelz fest und die Hülle knackt hörbar. Bei Zimmertemperatur wird die weiße Schokolade weich, und der Kontrast zwischen Hülle und Kern geht verloren.
Drei bis vier Kugeln neben einem Espresso funktionieren besser als Gebäck, weil die Röstbitterkeit die Süße auffängt. Für ein Dessert in zwei Minuten hacken Sie fünf Kugeln grob und streuen sie über 100 Gramm Vanilleeis. Die Splitter bleiben knackig, das Eis nimmt die Frucht auf.
Zu einem Glas Tawny Port oder einem gereiften Rum treten Vanille und Sahne nach vorn, während das Lakritz die Süße des Getränks bremst. Ein kräftiger Assam oder ein Earl Grey ohne Milch tut dasselbe auf leichtere Weise. In einer Schale auf dem Tisch übernehmen die Kugeln die Rolle von Pralinen, nur unaufwendiger und ohne Kühlkette.
Als Portion rechnen Sie mit fünf bis sechs Kugeln pro Person. Mehr wird schnell viel, denn die Hülle ist gehaltvoll: 100 Gramm bringen 448 Kilokalorien und 50 Gramm Zucker mit. Wer eine Schale herumreicht, füllt besser zweimal nach, als sie einmal randvoll zu stellen. Und im Handschuhfach eines Autos hat das Glas nichts verloren, dort schmilzt die weiße Schokolade schon an einem milden Nachmittag.
Der direkte Vergleich lohnt sich ebenfalls: neben der Ananas-Variante und der sauren Erdbeersorte zeigt sich, wie unterschiedlich dieselbe Frucht unter weißer Schokolade wirken kann. Dort steht die Säure vorn, hier die Sahne.
Gut zu wissen: Milch und Sojalecithin stecken in der Hülle. Für eine vegane Tafel ist diese Sorte damit nicht geeignet. Lagern Sie das Glas kühl und trocken, aber nicht im Kühlschrank. Kondenswasser lässt die Streusel ausbluten, und die Farben verlaufen in die Schokolade.
Warum Reismehl im Lakritzkern steckt
Der Kern wird mit Reismehl gekocht statt mit Weizenmehl, und genau deshalb ist die Sorte glutenfrei. Johan Bülow gründete sein Haus 2007 auf Bornholm mit einem einzigen Kessel und einer eigenen Rezeptur. Die Bindung übernehmen bis heute Melasse und Invertzuckersirup. Beide halten den Kern weich, ohne ihn klebrig werden zu lassen. Das ist der Grund, warum die Kugeln im Glas einzeln bleiben und nicht zusammenbacken.
Bülow begann mit einer Sorte und einem Verkaufswagen. Aus dem Kessel auf Bornholm wurde ein Haus, dessen Sorten heute Buchstaben tragen, von A wie The Original bis F wie Dark Sea Salt. Die Reihen mit Namen statt Buchstaben kamen später dazu, und mit ihnen die helleren, fruchtigeren Kompositionen. Confetti Cake steht am äußersten Ende dieser Entwicklung.
Interessanter ist die Hülle. Zuckerstreusel auf Schokolade sind ein handwerkliches Problem. Sie lösen sich, sobald die Ware bewegt wird, und liegen nach dem Transport als farbiger Staub am Boden. Die Manufaktur trägt deshalb einen dünnen Überzug aus Schellack und Gummiarabikum auf. Schellack ist ein Harz, das die Lackschildlaus absondert, Gummiarabikum stammt aus dem Saft der Akazie. Zusammen bilden sie einen Film, der die Streusel fixiert und der Kugel ihren leichten Glanz gibt. Dasselbe Verfahren kennt man von Dragees und überzogenen Mandeln.
Vier Prozent Zuckerstreusel sind dabei mehr, als es aussieht. Sie liefern nicht nur Farbe, sondern auch den feinen Biss, der die weiche Schokolade strukturiert. Das Glas fasst 270 Gramm, also rund 60 bis 70 Kugeln, je nach Kaliber. Hergestellt wird die Sorte wie das gesamte Sortiment in Dänemark, Gelatine kommt nicht zum Einsatz.
Die erste Sorte einer Reihe, die bleibt
Im August 2026 eröffnete diese Sorte die CELEBRATION-Kollektion. Sie ist damit die erste Lakrids-Neuheit seit Langem, die weder Winter- noch Frühjahrsware ist, denn die Reihe bleibt dauerhaft im Sortiment. Wer sie mag, muss also nicht auf die nächste Saison hoffen.
Das macht sie als Geschenk unkompliziert, weil hier nichts im Februar aus dem Regal verschwindet. Das Glas mit den bunten Punkten über dem schwarzen Band braucht keine Verpackung, es steht für sich. Als Mitbringsel zu einem Abendessen, als Dankeschön im Büro oder als Aufmerksamkeit ohne Anlass ist es die zugänglichste Wahl des Hauses. How it all began
Does this sound familiar? You return from vacation with a bottle of olive oil from Portugal in your suitcase, a jar of fruit spread from South Tyrol, perhaps a bar of chocolate from a small factory in France — and you ask yourself: Why can't I find something like this easily at home? We kept asking ourselves this question.
We are Kerstin and Stephan Uhlenbusch from Nordhorn, a city on the German-Dutch border. On our travels through Europe, we made the most wonderful culinary discoveries: mountain apple juices from the high altitudes of South Tyrol, Breton barrel butter, handmade pasta from Italy, French sea salt. It wasn't the big luxury products that fascinated us, but rather the honest, artisan-made foods from people who put their heart and soul into their products.
In 2002, we decided to turn this passion into our profession: to make good food accessible to everyone who cannot travel to the producers themselves. This is how our gourmet shipping business came into being — initially as a store in Nordhorn, soon after as one of the first gourmet online shops in Germany. Back then under the name nur Gutes (only good things) — today we continue it as ginusslande.com. The ambition has remained the same: this is where good taste resides.
Who we are
What drives us is the same curiosity with which we started in 2002: finding out who truly makes good food. Over more than two decades, we have built a network — with producers, traders, restaurateurs, and culinary artisans from all over Europe.
Kerstin was the managing director of the association of leading delicatessen merchants in Germany — the industry association of the country's best owner-managed delicatessen stores. In this role, she not only accompanied but actively shaped the German delicatessen industry. With the deli Festival, we also launched our own B2B trade fair for delicacies, which brought together producers, traders, and restaurateurs from all over Europe. The festival no longer exists today — but the relationships that arose from it still accompany us.
What does this mean for you? We know our industry like almost no one else. Chambers of commerce and economic development agencies from all over Europe repeatedly introduce us to exciting producers who want to offer their products on the German market. This way, genussland always offers something you won't find in any supermarket and hardly in any other shop.

An extra virgin olive oil from Portugal, a genuine Aceto Balsamico from Modena, Fleur de Sel from the Breton coast, hand-mixed spice blends. Fruit spreads, aromatic honey, truffle delicacies, chutneys, and mustard sauces. Vintage sardines and fine canned fish, risotto rice, and handmade pasta — basic ingredients for honest cooking and specialties for special moments.
Our fresh delivery service brings the legendary Beurre Bordier from Brittany, Italian Burrata, and fine salami to your home — securely packaged and continuously chilled.
Wine is particularly close to our hearts: white wine from Rheinhessen and the Pfalz, red wine from Austria and Burgenland, rosé for barbecue season, natural wine for the adventurous, sparkling wine and champagne for special moments. Not from all over the world — but from winemakers we have personally visited and whose work we appreciate. Many of them work organically or biodynamically.
Our Philosophy
What makes a product a genussland product? We ask ourselves this question for every single item we add to our range. The answer is never one-dimensional – it's the combination of craftsmanship, origin, ingredients, and the people behind them.
We ask many questions before a product finds its way into our shop. How is it made? Where do the raw materials come from? What philosophy does the manufacturer pursue? We quickly notice whether we are hearing marketing clichés or if a producer is happy to explain their journey. It is precisely this enthusiasm that we seek – and repeatedly find.
Craftsmanship. We prefer products from small manufactories and family businesses that often produce their culinary treasures by hand for generations. The careful processing and artisanal skill can be tasted in every bite.
Best Ingredients. For us, good quality begins with the raw materials. Whether it's fruit, vegetables, milk, meat, or grain – we ensure that our manufacturers rely on first-class, as natural as possible, ingredients. Many of our producers are organically certified; our shop itself is organically controlled under the number DE-ÖKO-037.
Origin and Regionality. We appreciate products with a clear regional identity. A South Tyrolean mountain apple juice made from slowly ripened, old apple varieties. A Portuguese olive oil from trees that have shaped the landscape for centuries. These stories of origin make delicacies what they are.
Personal relationship with the manufacturer. We have known many of our suppliers personally for years, some for over two decades. We visit them, taste together, and exchange ideas. This proximity guarantees transparency and trust.
At the end of the day, it has to taste good. We try all products ourselves – not just once, but again and again while cooking, at the table, on the plate. Only what convinces us personally finds its way into the shop.

What brings us the most joy: We get to accompany passionate individuals on their journey. People whose drive it is to make a good product even better. Some have been with us since our founding - for over twenty years.
There's the South Tyrolean fruit farmer who presses mountain apple juice from old, slowly ripened apple varieties, unlike anything else. The Italian balsamic family who ages their vinegar in Modena for decades. The Breton butter manufactory whose hand-churned butter is on the menu of the best restaurants in Europe. The Danish licorice pioneer who reinvented a centuries-old specialty.
Behind every product in our shop stands a person, a family, a story. And it is precisely these stories that make the difference between an interchangeable food item and a true delicacy.

Refrigerated Shipping
Our product range includes food items that react differently to heat. To ensure that every product arrives in perfect condition, we handle the shipping of two product groups with particular care.
Products requiring refrigeration
These items are marked with the note "kühlpflichtig" (requires refrigeration) in our shop — for example, Bordier butter, Parmigiano Reggiano from Cavola 993, Pancetta and Guanciale from Falorni, mountain herb ham and Tyrolean dumplings from Steiner, Prosciutto Crudo and truffle butter from Viani. We generally ship these products by express delivery with ice packs. They are only available via express shipping. The shipping costs will be clearly displayed before you complete your order at checkout.
Temperature-sensitive products
These items are marked with the note "temperaturempfindlich" (temperature-sensitive) — for example, salami and bacon specialties from Falorni and Steiner, as well as Goufrais cocoa confectionery. In cooler weather, they can be sent by standard shipping. In warmer weather, we switch the shipping to express shipping with ice packs before checkout — in this case, this shipping method is the only option, and the corresponding shipping costs will be displayed at checkout.
Shipping days for refrigerated and temperature-sensitive orders
To prevent any package from remaining in a distribution center over the weekend or public holidays, we only ship refrigerated orders from Monday to Thursday. Orders placed after Thursday will generally not be shipped until the following Monday. In summer, this rule also applies to temperature-sensitive products.
Packaging
Depending on the manufacturer, sausage and cheese specialties are supplied either vacuum-packed or traditionally without foil — for example, Italian salami from Falorni. If air is visible in a vacuum package upon delivery, this is not a quality defect. Please unpack the item and store it in the refrigerator, ideally wrapped in sausage paper or greaseproof paper.
Freight Forwarding
Freight forwarding is used for products that cannot be delivered as a package due to their size or weight. The selection is made automatically before completing the order. Please provide your phone number for scheduling the freight forwarding delivery.

Currently, we only ship within Germany. Shipping to Austria is in preparation — as soon as we can deliver there, you will find the details here.
Products subject to excise duty (alcohol) cannot be shipped to Austria.
Alcohol
Alcohol can only be shipped to adults. The deliverer will verify age upon delivery. By ordering alcohol, you also confirm that you or the recipient are of legal age.
