Schwäbischer Cider brut. Meadow apple, wine pear, yeasty depth and little sweetness.
Schwäbischer Cider brut is the dry, partially fermented fruit sparkling wine made by Jörg Geiger from hand-picked meadow apples and wine pears, with yeasty notes and mild bitterness. No sweet fruit cider, no still must, no apple sekt.
Schwäbischer Cider brut is a craft cider from Schlat that combines apple and pear from the Streuobst orchard into a dry, sparkling food companion. A plate of white asparagus, new potatoes and melted butter sits on the table. Beside it, a slender glass of cider with fine bubbles rising. The first sip smells of freshly cut apple, then pear and a little like bread dough.
Apple acidity, pear bitterness and a touch of yeast
The aroma combines vegetal notes and yeasty nuances with fresh apple and pear aromas. The yeastiness is reminiscent of bread crust or brioche. Such tones come from the fermentation and give the cider a depth that pure fruit drinks lack.
On the palate, apple and pear together carry the fruit. The old pear varieties provide a mild bitterness, the apple the acidity, the carbonation the lift. This makes the cider fresh and lean without being thin.
In France, "cidre brut" refers to the drier style compared to the sweet "cidre doux". The Swabians go one step further and ferment the pear along with it. What runs under the name Poiré as its own drink in Normandy is here in the same glass as the apple.
The brewery states around 12 g of residual sugar per liter. This is little for cider and corresponds to the upper limit of what is considered brut in sparkling wine. Anyone expecting a juicy-sweet cider will find it too bitter. In this case, the mild craft cider made from apple and wine pear from the same house is the more suitable choice.
A cider for asparagus and potatoes
According to the brewery, Schwäbischer Cider brut pairs well with asparagus and light potato dishes, as well as appetizers and vegetables. Asparagus is considered a difficult partner by sommeliers. Its slight bitterness can make some wines taste metallic, while the fruit acidity of the cider counteracts it.
In spring, the asparagus dish is the obvious occasion. For the rest of the year, the potato takes over: boiled potatoes with herb quark, a lukewarm Swabian potato salad with broth and chives, or a potato-leek gratin. Rösti with smoked trout and horseradish also gets along well with the acidity.
According to the manufacturer, the ideal drinking temperature is between 8 and 10 °C, and as a glass, he recommends the sekt flute. Served colder, the yeasty notes disappear; warmer, it loses its freshness. One bottle makes around six 125 ml glasses.
Good to know: This cider is not intended for hearty stews or dark game. It lacks the tannins and body to stand up to a braised beef roast. Its strength lies with light, vegetable-focused dishes and butter.
Our tip: Pair the cider with a Swabian snack of a pretzel stick, mountain cheese, and radishes. The acidity cleanses the palate after every bite, while the pear bitterness matches the spicy cheese.
Streuobst from the Albtrauf in the bottle
The cider comes from registered Streuobst orchards around Schlat near Göppingen, which the manufacturer lists as Schwäbisches WiesenObst. The areas are registered in a database. On-site inspections are carried out by the WiesenObst e.V. association and the independent testing body ABCERT.
Wine pears, also called Mostbirnen, taste bitter and furry fresh from the tree because they are rich in tannins and acidity. In the cider, exactly these properties provide structure and length. Apple alone would give the drink less backbone.
Partially fermented means that the fermentation ends before the yeast has converted all the fruit sugar into alcohol. In the brut, it goes significantly further than in the house's mild cider, which is why hardly any sweetness remains. The CC in the name stands for Craft Cider, the brewery's craft cider line.
High-stem fruit trees do not bear the same amount every year. Experts call this alternance: a strong harvest year is often followed by a weak one. For a brewery that works exclusively with such trees, this means dealing with different quantities and varieties every year.
Jörg Geiger took over his parents' inn, Lamm in Schlat, in 1997. A year later, he began experimenting with the harvest of five trees of the old Champagne Bratbirne. In 2001, he received the Cultural Landscape Award of the Schwäbischer Heimatbund for the preservation of the Streuobst orchards on the Albtrauf. In 2020, at the SISGA cider competition in Gijón, Spain, all six products submitted by the brewery were awarded.
The dry alternative to sekt at the table
Schwäbischer Cider brut fills a gap between beer and sparkling wine. It sparkles like a sekt, but remains fruitier and brings the Streuobst of the Alb to the table. For an asparagus dinner with friends, it is a drink with regional roots that carries you through the evening. It also accompanies a late brunch with scrambled eggs, chives, and smoked salmon.
As a gift, it is suitable for hosts who appreciate wine and like to try something new. The 750 ml bottle looks like a sparkling wine on the table. Stored cool and dark, it keeps well unopened; once opened, it is best drunk within one to two days.
A glass of Swabian Streuobst with little sweetness and lots of freshness, made for asparagus, potatoes, and long tables.

How it all began
Does this sound familiar? You return from vacation with a bottle of olive oil from Portugal in your suitcase, a jar of fruit spread from South Tyrol, perhaps a bar of chocolate from a small factory in France — and you ask yourself: Why can't I find something like this easily at home? We kept asking ourselves this question.
We are Kerstin and Stephan Uhlenbusch from Nordhorn, a city on the German-Dutch border. On our travels through Europe, we made the most wonderful culinary discoveries: mountain apple juices from the high altitudes of South Tyrol, Breton barrel butter, handmade pasta from Italy, French sea salt. It wasn't the big luxury products that fascinated us, but rather the honest, artisan-made foods from people who put their heart and soul into their products.
In 2002, we decided to turn this passion into our profession: to make good food accessible to everyone who cannot travel to the producers themselves. This is how our gourmet shipping business came into being — initially as a store in Nordhorn, soon after as one of the first gourmet online shops in Germany. Back then under the name nur Gutes (only good things) — today we continue it as ginusslande.com. The ambition has remained the same: this is where good taste resides.
Who we are
What drives us is the same curiosity with which we started in 2002: finding out who truly makes good food. Over more than two decades, we have built a network — with producers, traders, restaurateurs, and culinary artisans from all over Europe.
Kerstin was the managing director of the association of leading delicatessen merchants in Germany — the industry association of the country's best owner-managed delicatessen stores. In this role, she not only accompanied but actively shaped the German delicatessen industry. With the deli Festival, we also launched our own B2B trade fair for delicacies, which brought together producers, traders, and restaurateurs from all over Europe. The festival no longer exists today — but the relationships that arose from it still accompany us.
What does this mean for you? We know our industry like almost no one else. Chambers of commerce and economic development agencies from all over Europe repeatedly introduce us to exciting producers who want to offer their products on the German market. This way, genussland always offers something you won't find in any supermarket and hardly in any other shop.
What you'll find here
Our assortment includes fine foods, delicacies, wines, non-alcoholic beverages, and selected kitchen and home accessories — from manufacturers in Germany, Austria, Italy, France, Portugal, Spain, England, Iceland, Denmark, Sweden, Greece, and the USA.
An extra virgin olive oil from Portugal, a genuine Aceto Balsamico from Modena, Fleur de Sel from the Breton coast, hand-mixed spice blends. Fruit spreads, aromatic honey, truffle delicacies, chutneys, and mustard sauces. Vintage sardines and fine canned fish, risotto rice, and handmade pasta — basic ingredients for honest cooking and specialties for special moments.
Our fresh delivery service brings the legendary Beurre Bordier from Brittany, Italian Burrata, and fine salami to your home — securely packaged and continuously chilled.
Wine is particularly close to our hearts: white wine from Rheinhessen and the Pfalz, red wine from Austria and Burgenland, rosé for barbecue season, natural wine for the adventurous, sparkling wine and champagne for special moments. Not from all over the world — but from winemakers we have personally visited and whose work we appreciate. Many of them work organically or biodynamically.
Our Philosophy
What makes a product a genussland product? We ask ourselves this question for every single item we add to our range. The answer is never one-dimensional – it's the combination of craftsmanship, origin, ingredients, and the people behind them.
We ask many questions before a product finds its way into our shop. How is it made? Where do the raw materials come from? What philosophy does the manufacturer pursue? We quickly notice whether we are hearing marketing clichés or if a producer is happy to explain their journey. It is precisely this enthusiasm that we seek – and repeatedly find.
Craftsmanship. We prefer products from small manufactories and family businesses that often produce their culinary treasures by hand for generations. The careful processing and artisanal skill can be tasted in every bite.
Best Ingredients. For us, good quality begins with the raw materials. Whether it's fruit, vegetables, milk, meat, or grain – we ensure that our manufacturers rely on first-class, as natural as possible, ingredients. Many of our producers are organically certified; our shop itself is organically controlled under the number DE-ÖKO-037.
Origin and Regionality. We appreciate products with a clear regional identity. A South Tyrolean mountain apple juice made from slowly ripened, old apple varieties. A Portuguese olive oil from trees that have shaped the landscape for centuries. These stories of origin make delicacies what they are.
Personal relationship with the manufacturer. We have known many of our suppliers personally for years, some for over two decades. We visit them, taste together, and exchange ideas. This proximity guarantees transparency and trust.
At the end of the day, it has to taste good. We try all products ourselves – not just once, but again and again while cooking, at the table, on the plate. Only what convinces us personally finds its way into the shop.
The people behind the products
What brings us the most joy: We get to accompany passionate individuals on their journey. People whose drive it is to make a good product even better. Some have been with us since our founding - for over twenty years.
There's the South Tyrolean fruit farmer who presses mountain apple juice from old, slowly ripened apple varieties, unlike anything else. The Italian balsamic family who ages their vinegar in Modena for decades. The Breton butter manufactory whose hand-churned butter is on the menu of the best restaurants in Europe. The Danish licorice pioneer who reinvented a centuries-old specialty.
Behind every product in our shop stands a person, a family, a story. And it is precisely these stories that make the difference between an interchangeable food item and a true delicacy.
This is where good taste resides
Whether you want to order fine foods online, are looking for a special wine, want to put together a gift for a loved one, or simply want to enrich your kitchen with high-quality ingredients — genussland is the right place for you.

Refrigerated shipping
Our product range includes food items that react differently to heat. To ensure that every product arrives in perfect condition, we handle the shipping of two product groups with special care.
Products requiring refrigeration
These items are marked in our shop with the label "requires refrigeration" — for example, Bordier butter, Cavola 993 Parmigiano Reggiano, Falorni pancetta and guanciale, Steiner mountain herb-infused ham and Tyrolean dumplings, and Viani prosciutto crudo and truffle butter. As a general rule, we ship these products via express shipping with cooling packs. They can only be ordered via express shipping. The shipping costs will be clearly displayed at checkout before you complete your order.
Temperature-sensitive products
These items are marked with the label "temperature-sensitive" — for example, Falorni and Steiner salami and bacon specialties, as well as Goufrais cocoa confectionery. In cooler weather, they can be shipped via standard shipping. In warmer weather, we switch the shipping to express shipping with cooling packs before checkout — in this case, this shipping method is the only option, and the corresponding shipping costs will be displayed at checkout.
Shipping days for orders requiring refrigeration or that are temperature-sensitive
To ensure that no parcel remains in a distribution center over the weekend or during public holidays, we only ship orders requiring refrigeration from Monday to Thursday. Orders received after Thursday will generally not be shipped until the following Monday. In summer, this rule also applies to temperature-sensitive products.
Packaging
Depending on the manufacturer, sausage and cheese specialties are either vacuum-packed or traditionally packaged without plastic wrap — for example, Falorni Italian salami. If air is visible in a vacuum-packed package upon delivery, this is not a quality defect. Please unpack the item and store it in the refrigerator, ideally wrapped in butcher's paper or greaseproof paper.
Freight shipping
Freight shipping is used for products that cannot be delivered as parcels due to their size or weight. The option is selected automatically before the order is completed. Please provide your telephone number for freight shipping so that a delivery time can be arranged.
Delivery area and international shipping
Outside Germany, we currently deliver to Austria, the Netherlands, Switzerland, and Sweden. Shipping costs depend on the destination country and weight and will be displayed at checkout before you complete your order. There is no free delivery threshold for international deliveries.
Austria: via DPD (up to 10 kg €14.90, up to 20 kg €15.90, up to 25 kg €16.90) or via FedEx Regional Economy.
Netherlands: via DPD (up to 20 kg €12.90) or via PostNL (up to 3 kg €11.90, up to 5 kg €12.90, up to 10 kg €15.90, up to 15 kg €18.90, up to 20 kg €21.90; 20 to 40 kg in two parcels €43.80). We cannot ship parcels over 40 kg to the Netherlands.
Switzerland and Sweden: via FedEx Regional Economy.
No international shipping for: alcoholic beverages (wine, sparkling wine, spirits, liqueurs), fresh products requiring refrigeration (e.g. butter, cheese, raw and cooked ham, stuffed dumplings, truffle butter), and temperature-sensitive cured meats (e.g. salami, bacon). These items cannot be ordered from the shop for delivery addresses in Austria, the Netherlands, or Switzerland.
Switzerland is not part of the EU. Customs duties and Swiss VAT may apply upon import and must be paid by the recipient.
Shipping costs are calculated per parcel (maximum 25 kg per parcel). For international deliveries, providing the recipient's telephone number when placing the order is mandatory.
Alcohol
Alcohol can only be shipped to adults. The delivery person will check that the recipient is of legal age upon delivery. By ordering alcohol, you also confirm that you or the recipient are of legal age.
Shipping service
When shipping labels are created manually, we charge an additional €2.50 per label in addition to the stated shipping costs. Please note that we cannot combine orders that have already been placed.
Investigation of failed payments
We charge a processing fee of €5.00 to investigate and refund payments made to us in error.
With us, you pay in the way that is most convenient for you: PayPal, credit card, or Klarna.
Purchase on account, installment payment, and advance payment are also possible.
